Peach sorbet

Sweet and velvety, with the flavor of perfectly ripe peaches.

Rico's note: In summer, when peaches are at their best, keep a bag of peeled ones in the freezer just for this sorbet.

Ingredients

  • 400 g (14 oz) ripe peaches, peeled and pitted — fresh or frozen
  • ½ lemon, juice only (15 g / ½ oz)
  • 7 g sugar — adjust to taste; or the same amount of maple syrup; no added sugar: 10 g erythritol

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Blend the peach, lemon juice and sugar into a very smooth purée.
  2. Pour into the pint container without going past the MAX line.
