Noodle-free coconut aletria (Portuguese Christmas pudding)

The smell of Christmas aletria, made with coconut and not a single strand of pasta.

Rico's note: For when you're craving seasonal aletria but want to skip added sugar and flour. It turns out creamy and really tastes like Christmas.

Ingredients

  • 400 ml (1¾ cups) almond milk
  • 150 g (5½ oz) finely shredded coconut
  • 3 Medjool dates, blended into a paste (72 g / 2½ oz)
  • 1 cinnamon stick (3 g)
  • 1 lemon, zest only (2 g)
  • 15 g (½ oz) toasted sliced almonds
  • ground cinnamon, for dusting

Method

  1. Heat the almond milk with the cinnamon stick and lemon zest in a saucepan.
  2. Add the desiccated coconut and the blended dates.
