Mixed berry sorbet

Raspberry, blueberry and blackberry together, tart and intense.

Rico's note: Use a bag of frozen berries from the supermarket — it's cheaper and the sorbet turns out just the same.

Ingredients

  • 350 g (12½ oz) mixed berries (raspberries, blueberries, blackberries) — fresh or frozen
  • ½ lemon, juice only (15 g / ½ oz)
  • 10 g sugar — adjust to taste; or the same amount of maple syrup; no added sugar: 15 g erythritol
  • water, as needed — only if you need it for the RE-SPIN

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Blend the berries, lemon juice and sugar into a smooth purée.
  2. If you want a sorbet without the raspberry seeds, press the purée through a fine strainer.
