Homemade gluten-free granola with yogurt

Rico's note: Make a big jar of this granola on Sunday and it lasts the week — just add yogurt and whatever fruit you have.

Ingredients

  • 100 g (3½ oz) gluten-free rolled oats
  • 50 g (1¾ oz) chopped walnuts and almonds
  • 30 g (1 oz) assorted seeds (chia, sunflower, pumpkin)
  • 2 tbsp coconut oil (20 g / ¾ oz)
  • ½ tsp ground cinnamon (2 g)
  • 200 g (7 oz) plant-based yogurt (per serving)
  • 50 g (1¾ oz) fresh berries (per serving)

Method

  1. Preheat the oven to 160 °C (325 °F) and line a baking sheet with parchment paper.
  2. In a bowl, mix the oats, walnuts and almonds, and seeds.
