Homemade açaí bowl with granola

Thick as ice cream, but it's breakfast.

Rico's note: Keep açaí pulp in the freezer for days when you want a more festive bowl without leaving the house.

Ingredients

  • 100 g (3½ oz) frozen unsweetened açaí pulp
  • 1 frozen banana (120 g / 4 oz)
  • 50 ml (3½ tbsp) coconut milk beverage
  • 80 g (2¾ oz) berries
  • 30 g (1 oz) gluten-free granola
  • 10 g coconut shavings
  • 1 tbsp chia seeds (10 g)

Method

  1. Put the açaí pulp, frozen banana and coconut milk beverage in the blender.
  2. Blend until thick, like soft-serve — if needed, stop and scrape down the sides of the jar.
