Green bean salad with hard-boiled egg

A simple Portuguese classic that always hits the spot.

Rico's note: It's the simplest salad there is, but done right — bright green beans and a perfectly cooked egg — it needs nothing else.

Ingredients

  • 500 g (1 lb) green beans — cut into pieces
  • 1 red onion (60 g / 2 oz) — chopped
  • 3 eggs (150 g / 5½ oz) — cooked
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 1 tbsp vinegar (15 g / ½ oz)
  • salt and pepper, to taste

Method

  1. Cook the cut green beans in salted water for 8–10 minutes, until tender but still with some bite.
  2. Drain and immediately rinse under cold water to stop the cooking and keep them bright green.
