Ginger lemonade with no added sugar

Rico's note: Make this whenever you have ginger left over from another recipe — nothing goes to waste in the fridge if you can drink it.

Ingredients

  • 500 ml (2 cups) water (still or sparkling)
  • 3 lemons, juice only (90 g / 3¼ oz)
  • 3 cm (1¼ in) fresh ginger, grated (15 g / ½ oz)
  • fresh mint leaves, to taste (5 g) — optional
  • ice, as needed

Method

  1. Squeeze the lemons into a pitcher.
  2. Grate the ginger and add it to the pitcher.
