Flourless coconut queijadinhas (mini coconut custard cakes)

Mini queijadas, creamy inside, without a single gram of flour.

Ingredients

  • 150 g (5½ oz) finely shredded coconut
  • 100 ml (½ cup) coconut milk beverage
  • 3 whole eggs (150 g / 5½ oz)
  • 5 Medjool dates, blended into a paste (120 g / 4 oz)
  • 1 tsp vanilla extract (5 g)
  • 1 lemon, zest only (2 g)
  • 1 pinch sea salt (1 g)

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Beat the eggs with the date paste until creamy.
