Egg white porridge with cinnamon

A creamy, protein-packed porridge to start the day, ready in 15 minutes.

Rico's note: Make this on Sunday night and breakfast is sorted for several days, with no mid-morning stress.

Ingredients

  • 60 g (2 oz) ground oats (or oat flour)
  • 120 ml (½ cup) water
  • 540 ml (2¼ cups) egg whites
  • 1 cinnamon stick (2 g)
  • salt, to taste
  • lemon zest, to taste (5 g)
  • berries, dark chocolate, granola or protein yogurt, to serve — optional, not counted in the macros

Method

  1. In a saucepan, combine the ground oats, water, cinnamon stick, lemon zest and a pinch of salt.
  2. Set over medium heat and bring to a boil, stirring occasionally, until the mixture starts to thicken.
