Date and walnut cake

A dense date and walnut cake, sweetened only with the fruit.

Rico's note: This date and walnut cake has not a single gram of added sugar — the dates do all that work. Let them soften well in the hot water before you carry on.

Ingredients

  • 1 cup pitted dates, chopped (170 g / 6 oz)
  • 1 cup hot water (240 g / 8½ oz)
  • 1 cup almond flour (96 g / 3½ oz)
  • 1 cup gluten-free oat flour (90 g / 3¼ oz)
  • 1 cup chopped walnuts (100 g / 3½ oz)
  • 1 tsp baking soda (5 g)
  • 1 tsp baking powder (4 g)
  • 2 eggs (100 g / 3½ oz)
  • ¼ cup coconut oil (51 g / 1¾ oz)

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a cake pan.
  2. Put the chopped dates and baking soda in a bowl. Pour the hot water over them and let them sit for 10 minutes — this softens the dates and activates the baking soda.
