Crispy shrimp tacos

Cornflake-crusted shrimp from the air fryer, with a quick guacamole.

Ingredients

  • 4 mini whole-wheat tortillas (120 g / 4 oz)
  • 300 g (10½ oz) peeled shrimp
  • 1 egg (50 g / 1¾ oz)
  • salt, pepper, paprika and garlic powder, to taste
  • sugar-free corn flakes, crushed, as needed
  • 1 avocado (150 g / 5½ oz) — sauce
  • cherry tomatoes, to taste (50 g / 1¾ oz) — sauce
  • ½ lemon, juice only (15 g / ½ oz) — sauce
  • salt, pepper and garlic powder, to taste — sauce
  • chopped parsley, to taste — sauce
  • egg and yogurt mayonnaise (separate recipe), to taste — optional
  • olive oil, for greasing

Method

  1. Beat the egg and season it with salt, pepper, paprika and garlic powder.
  2. Dip the shrimp in the beaten egg, then in the crushed corn flakes, until well coated.
