Coconut mousse

An airy mousse with just four ingredients, ready in five minutes with a mixer.

Rico's note: This is the one to make when you want it to look like you slaved over dessert — really, you just whip everything and wait.

Ingredients

  • 400 ml (1¾ cups) chilled coconut cream
  • 4 Medjool dates (80 g / 2¾ oz)
  • 1 tsp vanilla extract (3 g)
  • sea salt, to taste

Method

  1. Make sure the coconut cream is well chilled.
  2. Beat all the ingredients with an electric mixer for 3–4 minutes, until light and fluffy.
