Coconut manjar (Brazilian coconut pudding)

A plant-based take on traditional manjar branco, set and creamy.

Rico's note: A dairy-free version that's perfect when someone at the table is lactose intolerant — and so good it deserves a permanent place in your dessert rotation.

Ingredients

  • 500 ml (2 cups) coconut milk beverage
  • 100 g (3½ oz) finely shredded coconut
  • 3 tbsp agar-agar powder (24 g / ¾ oz)
  • 4 Medjool dates, blended into a paste (80 g / 2¾ oz)
  • 1 tsp vanilla extract (3 g)
  • toasted sliced almonds (15 g / ½ oz) — to decorate

Method

  1. Blend the dates with a little of the coconut milk beverage until you have a paste.
  2. In a saucepan, combine the rest of the coconut milk beverage, the desiccated coconut and the agar-agar.
