Coconut lime protein ice cream

Tropical, fresh and tangy, with shredded coconut for texture.

Rico's note: The pint for when summer calls for something other than the usual chocolate — the lime cuts the sweetness just right.

Ingredients

  • 200 g (7 oz) low-fat Greek yogurt
  • 100 ml (½ cup) light coconut milk
  • 80 ml (¼ cup) water
  • 50 g (1¾ oz) vanilla or coconut protein powder
  • 6 g sugar — or 1 tsp honey; no added sugar: 18 g erythritol or granulated stevia
  • 1 lime, zest and juice (40 g / 1½ oz)
  • 20 g (¾ oz) shredded coconut — mix-in

This recipe uses half the sugar because protein powder is usually sweetened: taste the mix and, if it needs it, add more, up to 13 g in total. In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Blend the yogurt, coconut milk, water, protein powder, sugar, and the lime zest and juice until smooth.
  2. Pour into the pint container without going past the MAX line.
