Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Coconut lemon cream

Whipped coconut cream, sweetened with dates and scented with lemon.

Rico's note: It whips up in five minutes and it's so good you'll want to keep it in the fridge at all times.

Ingredients

  • 400 ml (1¾ cups) coconut cream (solid part of a chilled can)
  • 3 Medjool dates, blended into a paste (60 g / 2 oz)
  • 1 tsp vanilla extract (3 g)
  • 2 organic lemons, zest only (4 g)
  • ½ lemon, juice only (15 g / ½ oz)
  • sea salt, to taste

Method

  1. Refrigerate the can of coconut cream overnight.
  2. Scoop out only the solid part that forms on top, leaving the liquid behind.
