Coconut chicken noodles

A quick stir-fry with chicken, bell peppers and a coconut-soy sauce.

Rico's note: The Friday dinner for after a long day — it all comes together in one wok, with no extra pots to wash.

Ingredients

  • 1 kg (2¼ lb) chicken, cut into strips
  • 200 g (7 oz) shiitake mushrooms
  • 1 red bell pepper (120 g / 4 oz)
  • 1 yellow bell pepper (120 g / 4 oz)
  • 250 g (9 oz) egg noodles, uncooked
  • 500 ml (2 cups) light coconut milk
  • 3 tbsp soy sauce (45 g / 1½ oz)
  • salt, pepper, paprika, garlic powder and onion powder, to taste
  • chopped chives, to taste
  • sesame seeds, to taste — optional
  • olive oil, to taste — for sautéing

Method

  1. Heat a drizzle of olive oil in a wok or large skillet and stir-fry the bell peppers and mushrooms; add the chicken strips in two batches, so you don't crowd the pan, and cook until cooked through.
  2. Season with salt, pepper, paprika, garlic powder and onion powder.
