Citrus gelatin

Orange, lemon and lime juices, set into a refreshing gelatin sweetened only with dates.

Rico's note: Make this when you have extra citrus in the fridge and want a dessert that feels light after dinner.

Ingredients

  • 3 oranges, juice only (240 g / 8½ oz)
  • 1 orange, zest only (2 g)
  • 2 lemons, juice only (60 g / 2 oz)
  • 1 lemon, zest only (2 g)
  • 2 limes, juice only (60 g / 2 oz)
  • 4 Medjool dates (80 g / 2¾ oz)
  • 3 tbsp agar-agar powder (24 g / ¾ oz)
  • fresh mint — to decorate
  • citrus segments — to decorate

Method

  1. Mix all the citrus juices in a bowl.
  2. Blend the dates with a little of the juice until you have a smooth paste.
