Chocolate red wine cake

An intense chocolate cake, with red wine adding depth of flavor.

Rico's note: Almost all the red wine in this chocolate cake evaporates in the oven; only the aroma stays. It's the cake for when you want to look like you worked harder than you did.

Ingredients

  • 1 cup almond flour (96 g / 3½ oz)
  • 1 cup rice flour (150 g / 5½ oz)
  • ½ cup cocoa powder (60 g / 2 oz)
  • ⅔ cup white or brown sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (200 g)
  • 1 tsp baking soda (5 g)
  • 1 tsp baking powder (4 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ½ cup dry red wine (120 g / 4 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a cake pan.
  2. In a bowl, mix the flours, cocoa, sugar, baking soda and baking powder.
