Values are for the first option listed in the ingredients; substitutions and variations change them. Carbs exclude fiber; energy uses the EU conversion factors (fiber at 2 kcal/g). Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Chocolate avocado mousse

Creamy and intense, dairy-free, and ready in ten minutes with an immersion blender or a Thermomix® or similar.

Rico's note: Make it when you get home late and want something sweet without turning on the oven. It's ready in the time it takes to wash the dinner dishes.

Ingredients

  • 2 ripe avocados (400 g / 14 oz)
  • 3 tbsp pure cocoa powder (18 g / ¾ oz)
  • 6 pitted Medjool dates (144 g / 5 oz)
  • 60 ml (¼ cup) almond milk
  • 1 tsp vanilla extract (5 g)
  • 1 pinch sea salt (1 g)

Method

  1. Halve the avocados, remove the pits and scoop out the flesh.
  2. Put the flesh in the food processor with the cocoa, dates, almond milk, vanilla and salt.
