Chilled pineapple cream
A creamy blend of pineapple and coconut, refreshing and quick to make.
Ingredients
- 300 g (10½ oz) fresh pineapple, diced
- 200 ml (¾ cup) coconut cream
- 3 Medjool dates (60 g / 2 oz)
- ½ lemon, juice only (15 g / ½ oz)
- 1 tsp fresh ginger, grated (2 g)
- fresh mint leaves — to decorate
Method
- Set aside a few pineapple cubes for decorating, then put the rest of the pineapple, the coconut cream and the dates in the blender.
- Add the lemon juice and grated ginger.
