Chickpea mini pizzas

A flourless base made from chickpeas and cottage cheese.

Rico's note: Freeze them already cooked, without the final layer of cheese — then reheat them in the air fryer and the cheese is always freshly melted.

Ingredients

  • 2 eggs (100 g / 3½ oz) — base
  • 100 g (3½ oz) cottage cheese — base
  • 200 g (7 oz) cooked chickpeas, drained — base
  • salt, pepper and garlic powder, to taste — base
  • 180 g (6½ oz) tomato paste — topping, total for all 6
  • 120 g (4 oz) shredded reduced-fat cheese — topping
  • 180 g (6½ oz) cooked shredded chicken (or another protein) — topping

Method

  1. Blend the eggs, cottage cheese and chickpeas in a food processor or blender until you have a smooth batter.
  2. Season with salt, pepper and garlic powder and mix well.
