Chicken skewers with bell peppers

A 30-minute marinade, 15 minutes on the grill — a summer dish all year round.

Rico's note: Whenever you fire up the grill outside, these are the skewers that go on first.

Ingredients

  • 500 g (1 lb) chicken breast — cut into 3 cm (1¼ in) cubes
  • 1 red bell pepper (100 g / 3½ oz) — cut into squares
  • 1 yellow bell pepper (100 g / 3½ oz) — cut into squares
  • 1 green bell pepper (100 g / 3½ oz) — cut into squares
  • 1 tbsp olive oil (15 g / ½ oz)
  • 1 lemon, juice only (30 g / 1 oz)
  • 2 cloves garlic (6 g) — chopped
  • 1 tsp paprika (2 g)
  • 1 tsp oregano (1 g)
  • salt and pepper, to taste

Method

  1. Cut the chicken into cubes of about 3 cm (1¼ in), all roughly the same size.
  2. In a bowl, mix the olive oil, lemon juice, chopped garlic, paprika and oregano.
