Chicken cutlets with coffee mustard sauce

The bitterness of coffee and the kick of mustard bring chicken to life.

Rico's note: It sounds strange until you try it: the coffee cuts through the richness of the sauce and leaves only a toasty flavor.

Ingredients

  • 600 g (1¼ lb) chicken breast cutlets
  • olive oil, to taste (10 g)
  • 1 chopped onion (100 g / 3½ oz)
  • 2 cloves garlic, minced (6 g)
  • 100 g (3½ oz) sliced mushrooms
  • chopped parsley, to taste
  • salt, pepper and garlic powder, to taste
  • 2 espressos, 60 ml (60 g / 2 oz)
  • 120 g (4 oz) plain low-fat Greek yogurt
  • 1 tbsp low-fat Dijon mustard (15 g / ½ oz)

Method

  1. Sauté the onion, garlic and mushrooms in a drizzle of olive oil until golden.
  2. Season the chicken cutlets with salt, pepper and garlic powder and add them to the skillet.
