Chicken and brown rice with vegetables

One pot, fluffy rice and well-seasoned chicken — an easy weeknight dinner.

Rico's note: It makes three days of meal-prep lunches and doesn't lose its charm in the microwave — exactly what you want from a weeknight dish.

Ingredients

  • 200 g (7 oz) brown rice, uncooked
  • 300 g (10½ oz) chicken breast, diced
  • 1 carrot (150 g / 5½ oz) — diced
  • 1 cup peas (100 g / 3½ oz)
  • 1 bell pepper (100 g / 3½ oz) — diced
  • 1 onion (100 g / 3½ oz) — chopped
  • 2 cloves garlic (6 g) — chopped
  • 1 bay leaf (0.2 g)
  • 1 tsp sweet paprika (3 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt, to taste
  • water, as needed

Method

  1. Cut the chicken into small cubes and set aside.
  2. In a wide saucepan, sauté the onion and garlic in the olive oil until translucent.
