Chia rice pudding with dates

The classic pudding, minus the rice and sweetened only with dates — your dessert for the week.

Rico's note: Leave it to set in the fridge before you head to the gym and eat it at night, straight from the jar. It's the dessert for when you want something sweet without breaking your routine.

Ingredients

  • 4 tbsp chia seeds (48 g / 1¾ oz)
  • 250 ml (1 cup) unsweetened coconut milk beverage
  • 1 tsp ground cinnamon (2 g)
  • 1 organic lemon, zest only (2 g)
  • 2 pitted Medjool dates (48 g / 1¾ oz)
  • 1 cinnamon stick, to decorate (3 g) — optional

Method

  1. Blend the dates with the coconut milk beverage until completely smooth, with no bits left.
  2. Add the chia seeds, cinnamon and lemon zest and stir well with a spoon.
