Burger on a sweet potato and carrot base

A juicy burger on a crispy base, with no bun and no regrets.

Rico's note: Make this so you don't have to buy buns every time you want a burger at home. The carrot helps the base hold firm, so don't skip it.

Ingredients

  • 250 g (9 oz) grated sweet potato
  • 200 g (7 oz) grated carrot
  • 3 eggs (150 g / 5½ oz)
  • 100 g (3½ oz) shredded reduced-fat cheese
  • salt and black pepper, to taste
  • 300 g (10½ oz) lean ground beef
  • paprika and garlic powder, to taste — to season the meat
  • 1 medium avocado (150 g / 5½ oz) — flesh only
  • ½ lemon, juice only (15 g / ½ oz)

Method

  1. Grate the sweet potato and carrot and squeeze them firmly in a clean kitchen towel to remove as much water as possible.
  2. In a bowl, mix the grated vegetables with the beaten eggs and grated cheese, season with salt and pepper and stir until evenly combined.
