Buckwheat crêpes with mixed berries

Gluten-free crêpes made in the air fryer, with honey and berries.

Rico's note: Buckwheat is gluten-free and has a more rustic flavor than a regular crêpe.

Ingredients

  • 100 g (3½ oz) buckwheat flour
  • 1 large egg (55 g / 2 oz)
  • 200 ml (¾ cup) plant-based milk (almond or oat)
  • 50 ml (3½ tbsp) water
  • 1 tbsp honey, plus more to serve (15 g / ½ oz)
  • 1 tsp vanilla extract, optional (5 g)
  • 1 pinch fleur de sel (1 g)
  • 100 g (3½ oz) fresh or frozen mixed berries (to serve)
  • olive oil spray, as needed

Method

  1. In a bowl, mix the buckwheat flour with the fleur de sel.
  2. In another bowl, whisk the egg with the plant-based milk, water, honey and vanilla.
