Make it at night and wake up to breakfast ready in the fridge.

Ingredients

  • 4 tbsp chia seeds (40 g / 1½ oz)
  • 250 ml (1 cup) unsweetened coconut milk beverage
  • 150 g (5½ oz) fresh or frozen berries
  • ½ tsp vanilla extract (5 g)
  • 1 tbsp sliced almonds (10 g) — to decorate

Method

  1. In a bowl, stir the chia seeds into the coconut milk beverage, mixing well for a few seconds so they don't clump.
  2. Add the vanilla and stir again.
