Beef taco burger

Seasoned beef pressed onto a wrap and folded like a stuffed taco.

Rico's note: A great way to use up ground beef without a pile of dishes — everything happens in the same skillet.

Ingredients

  • 2 mini whole-wheat tortillas (60 g / 2 oz)
  • 200 g (7 oz) ground beef (or 2 chicken patties)
  • salt, paprika, black pepper and garlic powder, to taste
  • olive oil, to taste (5 g)
  • ½ red onion, to serve (60 g / 2 oz)
  • 1 tomato, to serve (100 g / 3½ oz)
  • 2 fried eggs (100 g / 3½ oz)
  • 30 g (1 oz) shredded low-fat cheese
  • yogurt sauce (recipe in this ebook), to taste (40 g / 1½ oz)
  • watercress or arugula, to taste

Method

  1. Season the ground meat with salt, pepper, paprika and garlic powder.
  2. Spread a portion of meat over each wrap, pressing firmly so it sticks in an even layer.
