Banana walnut cake

The classic banana bread, fluffy and gluten-free, with walnuts inside.

Rico's note: When your bananas are getting too spotty, this is what to make — slice it and freeze half.

Ingredients

  • 3 ripe bananas, mashed (360 g / 12½ oz)
  • 158 g (5½ oz) rice flour
  • 90 g (3¼ oz) gluten-free oat flour
  • 95 g (3¼ oz) white or brown sugar — no added sugar: 133 g erythritol
  • 1 tsp ground cinnamon (3 g)
  • 1 tbsp baking powder (14 g)
  • 1 tsp baking soda (5 g)
  • ½ tsp salt (3 g)
  • 2 eggs (100 g / 3½ oz)
  • 73 g (2½ oz) melted coconut oil
  • 50 g (1¾ oz) chopped walnuts — optional

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a loaf pan.
  2. Mash the ripe bananas with a fork into a purée.
