Banana and cottage cheese skillet cake

Rico's note: On days when the fridge is nearly empty, this always saves the day: all it needs is a banana and a bit of cottage cheese.

Ingredients

  • 1 ripe banana (118 g / 4 oz)
  • 1 egg (50 g / 1¾ oz)
  • ½ cup cottage cheese (100 g / 3½ oz)
  • 5 tbsp oat flour (50 g / 1¾ oz)
  • 50 g (1¾ oz) vanilla protein powder
  • sugar, to taste — optional; no added sugar: sweetener to taste
  • 1 square 85% dark chocolate (5 g) — for the topping; no added sugar: sugar-free 85% dark chocolate
  • olive oil, for greasing

Method

  1. Mash the banana in a bowl into a rough purée.
  2. Add the egg and cottage cheese and mix well, until you can barely feel any lumps of cheese.
