Baked eggs on tomatoes

Roasted tomato concentrates and becomes almost a sauce.

Rico's note: Use the ripest tomatoes you have — the riper they are, the sweeter they get once roasted.

Ingredients

  • 2 eggs (100 g / 3½ oz)
  • 4 ripe tomatoes (400 g / 14 oz)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 1 clove garlic (5 g)
  • fresh basil, oregano, salt and pepper, to taste

Method

  1. Preheat the oven to 200 °C (400 °F).
  2. Halve the tomatoes and place them cut side up in a baking dish.
