Avocado toast with egg

The classic that never fails, ready in ten minutes.

Rico's note: When you get home late and don't want to think too hard, this does the job: protein, good fat, and it's ready before the coffee's brewed.

Ingredients

  • 2 slices gluten-free bread (80 g / 2¾ oz)
  • 1 avocado (120 g / 4 oz) — flesh only
  • 2 eggs (100 g / 3½ oz)
  • 6 cherry tomatoes (50 g / 1¾ oz)
  • piri-piri flakes or red pepper flakes, to taste
  • 1 tsp olive oil (5 g)
  • lemon juice, salt and pepper, to taste

Method

  1. Toast the gluten-free bread slices well.
  2. Mash the avocado on a plate with a fork and add lemon juice, salt and pepper.
