Air fryer mango ginger chicken

A tropical twist on a 33-minute dinner, sweet and spicy at the same time.

Rico's note: When you want a break from the usual chicken and vegetables, make this — the mango adds a contrast that surprises anyone used to the same old thing.

Ingredients

  • 300 g (10½ oz) chicken breast, diced
  • 100 g (3½ oz) ripe mango, mashed
  • 1 tbsp fresh ginger, grated (6 g)
  • 1 lime, juice only (15 g / ½ oz)
  • 1 tbsp soy sauce (15 g / ½ oz)
  • 1 tbsp extra-virgin olive oil (10 g)
  • fresh cilantro, to serve

Method

  1. Blend the mango with the ginger, lime juice, soy sauce and olive oil to make the marinade. Set aside 2 tbsp in a separate bowl for the end.
  2. Marinate the chicken cubes in the mixture for 15 minutes.
