Zucchini cocoa brownie

Intense chocolate with zucchini hidden inside, and you won't taste it.

Rico's note: Grating zucchini into a brownie is the trick for sneaking vegetables into a dessert without anyone noticing.

Ingredients

  • 1 zucchini (200 g / 7 oz) — grated
  • 2 eggs (100 g / 3½ oz)
  • 100 g (3½ oz) oat flour — or 1 cup blitzed oats
  • 60 g (2 oz) reduced-fat cocoa powder
  • 30 g (1 oz) almond flour
  • 150 ml (½ cup) unsweetened almond milk
  • 5 ml vanilla extract
  • 10 g dark chocolate, in pieces
  • 1 tsp baking powder (4 g)
  • 2 tbsp white or brown sugar (24 g / ¾ oz) — no added sugar: 2 tbsp granulated stevia or another sweetener
  • 1 pinch salt (1 g)
  • 30 g (1 oz) chocolate protein powder — optional topping, not counted in the macros
  • 10 g reduced-fat cocoa powder — optional topping, not counted in the macros
  • plant-based milk, to taste — optional topping, not counted in the macros

Method

  1. Grate the zucchini and squeeze it firmly in a kitchen towel to remove the excess water.
  2. In a bowl, combine the grated zucchini, eggs, almond milk and vanilla extract and mix.
