Zucchini and basil soup

Light, green and fresh, with basil bringing it to life.

Rico's note: In the months when zucchini is cheap and at its best, this is worth making almost every week.

Ingredients

  • 4 medium zucchini (800 g / 1¾ lb) — sliced into rounds
  • 1 potato (150 g / 5½ oz) — diced
  • 1 onion (150 g / 5½ oz)
  • 1 handful of fresh basil (15 g / ½ oz)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and pepper, to taste

Method

  1. Sauté the onion in the olive oil until lightly golden, 3 minutes.
  2. Add the sliced zucchini and diced potato and stir for 1 minute.
