White chocolate raspberry cake

A delicate cake with white chocolate chips and fresh raspberries.

Rico's note: This white chocolate raspberry cake is for when you want a dessert that looks more elaborate than it really is.

Ingredients

  • ½ cup fresh or frozen raspberries (62.5 g / 2¼ oz)
  • ½ cup white chocolate chips (85 g / 3 oz) — no added sugar: sugar-free white chocolate chips
  • 2 cups almond flour (192 g / 7 oz)
  • ⅓ cup sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (100 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ⅓ cup coconut oil (67 g / 2¼ oz)
  • ¼ cup almond milk (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a pan.
  2. In a bowl, mix the almond flour, sugar and baking powder.
