You can't taste the beans — they just add structure and softness.

Rico's note: Nobody guesses there are beans in here; serve it without a word and ask everyone to guess after dinner.

Ingredients

  • 220 g (8 oz) cooked unsalted white beans, well mashed
  • 120 g (4 oz) rice flour
  • 120 g (4 oz) sweet cassava starch (polvilho doce)
  • 1 tsp salt (6 g)
  • 1 tbsp baking powder (12 g)
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp olive oil (30 g / 1 oz)
  • 60 ml (¼ cup) water (if needed) — only if the dough is very stiff

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the mashed white beans with the eggs and olive oil.
