Watermelon lime sorbet

The most refreshing of them all — almost 90% water, pure summer flavor.

Rico's note: On the hottest August afternoons, this is the one that saves the day — light, not heavy at all, and truly refreshing.

Ingredients

  • 400 g (14 oz) seedless watermelon, cubed
  • 1 lime, juice only (30 g / 1 oz)
  • 10 g sugar — adjust to taste; or the same amount of maple syrup; no added sugar: 15 g erythritol
  • water, as needed — only if you need it for the RE-SPIN

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Blend the watermelon, lime juice and sugar until you have a very smooth liquid.
  2. Pour into the pint container without going past the MAX line — water expands as it freezes.
