Walnut, raisin and cinnamon bread

Just sweet enough — it smells like Grandma's kitchen while it bakes.

Rico's note: Go easy on the raisins: they add that touch that recalls Christmas cake.

Ingredients

  • 192 g (7 oz) almond flour
  • 56 g (2 oz) coconut flour
  • 70 g (2½ oz) white or brown sugar — no added sugar: 100 g erythritol
  • 1 tbsp baking powder (12 g)
  • 1 tsp ground cinnamon (2.6 g)
  • ½ tsp salt (3 g)
  • 4 eggs (200 g / 7 oz)
  • 73 g (2½ oz) melted coconut oil
  • 50 g (1¾ oz) chopped walnuts
  • 40 g (1½ oz) raisins — optional; use sparingly because of the sugar in the fruit

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Combine the dry ingredients: the flours, sugar, baking powder, cinnamon and salt.
