Vegan salted date caramel

Caramel sweetness with no refined sugar, and fleur de sel to lift it.

Rico's note: Salted date caramel is for when you want something properly sweet without reaching for refined sugar.

Ingredients

  • 100 g (3½ oz) pitted dates
  • 200 ml (¾ cup) unsweetened oat milk
  • 30 g (1 oz) vanilla plant-based protein powder
  • 20 g (¾ oz) peanut butter (100% peanuts)
  • fleur de sel, to taste

Method

  1. Soak the dates in warm water for 10 minutes, then drain well.
  2. Put everything in the blender and blend for a good while, until the dates break down completely and the mixture is as smooth as caramel.
