Turmeric and ginger bread

An intense golden color and a gentle heat, gluten-free.

Rico's note: The color of this bread always surprises first-timers, and the ginger gives it a warm finish that goes well with fresh cheese (queijo fresco).

Ingredients

  • 180 g (6½ oz) brown rice flour
  • 100 g (3½ oz) almond flour
  • 60 g (2 oz) sweet cassava starch (polvilho doce)
  • 1 tbsp ground turmeric (7 g)
  • 1 tsp ground ginger (2 g)
  • 1 tsp salt (6 g)
  • ground black pepper, to taste — a classic pairing with turmeric
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • 240 ml (1 cup) coconut milk
  • 3 tbsp olive oil (30 g / 1 oz)

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a loaf pan.
  2. In a bowl, combine the flours, cassava starch, turmeric, ginger, salt, pepper and baking powder.
