Tiramisu pancakes

Coffee-soaked pancakes stacked with cream, just like tiramisu.

Ingredients

  • 5 tbsp oats (50 g / 1¾ oz)
  • ¼ cup egg whites (60 g / 2 oz)
  • ¼ cup milk (60 g / 2 oz) — e.g. unsweetened almond milk
  • ½ cup cottage cheese (100 g / 3½ oz)
  • 25 g (1 oz) cookie-flavored protein powder — or 25 g oat flour + sugar to taste
  • salt, to taste
  • cinnamon, to taste — optional
  • 100 g (3½ oz) low-fat Greek yogurt — for the cream
  • 25 g (1 oz) vanilla protein powder — for the cream
  • 1 espresso shot (30 ml) — for assembling
  • reduced-fat cocoa powder, as needed — for sprinkling
  • coconut oil or olive oil, for greasing

Method

  1. In the blender, blend the oats, egg whites, milk, cottage cheese, protein powder, salt and cinnamon until smooth.
  2. Heat a nonstick skillet with a drizzle of coconut oil or olive oil, spreading it well.
