Layers of coconut cream, coffee and homemade almond cookies, sweetened only with dates.

Rico's note: When you want to impress without much work, serve it in clear glasses — the layers do all the work.

Ingredients

  • 300 ml (1¼ cups) coconut cream — for the cream
  • 4 Medjool dates, blended into a paste (80 g / 2¾ oz) — for the cream
  • 1 tsp vanilla extract (3 g) — for the cream
  • 200 ml (¾ cup) strong coffee, cooled
  • 3 g cocoa powder — for the coffee
  • 60 g (2 oz) ground almonds — for the cookies
  • 2 Medjool dates, blended into a paste (40 g / 1½ oz) — for the cookies
  • pure cocoa powder, as needed (8 g) — for sprinkling

Method

  1. Whip the coconut cream with the dates and vanilla until fluffy.
  2. Make the coffee and let it cool completely.
