Sweet potato toast with smashed avocado

Toast without the bread, and still satisfying.

Rico's note: On bread-free days, make this — toasted sweet potato holds the avocado just as well as a regular slice.

Ingredients

  • 1 medium sweet potato, sliced (200 g / 7 oz)
  • 1 ripe avocado (150 g / 5½ oz) — flesh only
  • ½ lemon, juice only (15 g / ½ oz)
  • 1 tsp sesame seeds (3 g) — optional
  • sea salt and pepper, to taste

Method

  1. Cut the sweet potato into slices about 1 cm (½ in) thick, skin on.
  2. Toast the slices in the toaster 2 to 3 times, until tender inside and golden outside.
