Ingredients
- 150 g (5½ oz) sweet potato
- 1 medium ripe banana (118 g / 4 oz)
- 2 eggs (100 g / 3½ oz)
- 60 g (2 oz) oat flour
- 60 g (2 oz) protein powder (or oat flour)
- 20 g (¾ oz) dark chocolate — no added sugar: sugar-free dark chocolate
- cinnamon, to taste
- lemon zest, to taste — optional
- sugar, to taste — optional; no added sugar: sweetener to taste
Method
- Preheat the oven to 180 °C (350 °F).
- Cook the sweet potato in the microwave for about 7 minutes, or in a pot of boiling water, until soft.
