Sweet chestnut cream

A sweet purée of cooked chestnuts, sweetened only with dates.

Rico's note: Make this in the fall, when chestnuts are everywhere — it has the flavor of chestnuts roasted on a street corner, only by the spoonful.

Ingredients

  • 400 g (14 oz) peeled chestnuts
  • 200 ml (¾ cup) almond milk
  • 6 Medjool dates (120 g / 4 oz)
  • 1 tsp ground cinnamon (3 g)
  • 1 tsp vanilla extract (3 g)
  • sea salt, to taste

Method

  1. Cook the chestnuts in water for 30–35 minutes, until very soft.
  2. Drain well and blend with the almond milk and dates until you have a purée.
