Stuffed peppers with ground meat and brown rice
Sweet peppers filled with ground meat, brown rice and tomato, baked in the oven.
Ingredients
- 4 large bell peppers, red or yellow (720 g / 1½ lb)
- 300 g (10½ oz) lean ground meat (beef or turkey)
- 100 g (3½ oz) cooked brown rice
- 1 chopped onion (100 g / 3½ oz)
- 2 ripe tomatoes, chopped (200 g / 7 oz)
- 2 cloves garlic, minced (6 g)
- 1 handful of chopped fresh parsley (5 g)
- 1 tbsp olive oil (15 g / ½ oz)
- salt and pepper, to taste
Method
- Preheat the oven to 190 °C (375 °F) and slice the tops off the peppers, setting them aside; remove the seeds and white membranes from inside.
- In a skillet with a drizzle of olive oil, sauté the onion and garlic over medium heat for 4 minutes, until translucent.
