Spinach and cucumber green juice

An intense green juice with ginger and a pinch of sea salt.

Rico's note: Make this on Sunday while you prep the week's lunches — it's the perfect moment to use up the greens in the fridge.

Ingredients

  • 2 cups fresh spinach (60 g / 2 oz)
  • 2 lemons, juice only (60 g / 2 oz)
  • 1 cucumber (300 g / 10½ oz)
  • 1 green apple (150 g / 5½ oz)
  • 1 piece fresh ginger (10 g)
  • sea salt — 1 pinch
  • water, as needed — only if blending instead of juicing

Method

  1. Wash the spinach, cucumber and apple well.
  2. Run everything through the juicer along with the ginger, or blend with water and strain.
