- 1 cup almond flour (100 g / 3½ oz)
- 1 cup rice flour (150 g / 5½ oz)
- 2 tbsp sugar (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (36 g)
- 2 tbsp cocoa powder (10 g)
- 1 tsp cinnamon (2 g)
- 1 tsp ground ginger (2 g)
- ½ tsp ground cloves (2 g)
- 1 tbsp baking powder (12 g)
- 3 eggs (150 g / 5½ oz)
- ½ cup coconut milk (120 g / 4 oz)
- ¼ cup coconut oil (52.5 g / 1¾ oz)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Preheat the oven to 180 °C (350 °F) and grease muffin cups or pão de mel molds.
- In a bowl, combine all the dry ingredients: almond flour, rice flour, sugar, cocoa powder, cinnamon, ginger, cloves and baking powder.
